South Indian side dishes 1

Snake gourd masala

Ingredients

  • Big snake gourd 1
  • big onion 1
  • tomato 1
  • gram dhal 1/4 cup
  • grated ginger, coconut as needed
  • cut garlic as needed
  • turmeric powder 1/4 tsp
  • chili powder 1/4 tsp
  • for seasoning mustard seed, curry leaves, gram dhal, urad dhal, oil
  • salt as needed

Method

  1. Cut the tomato onion and snake gourd
  2. Soak the gram dal in water for 1/2 hour
  3. Then boil the tomato, onion and gram dhal in a vessel
  4. After 15 minutes add snake gourd, turmeric powder, chili powder and salt
  5. When it is almost done add ginger, garlic, and grated coconut
  6. Add oil in an another pan and add mustard seed, curry leaves, gram dhal and urad dhal
  7. Add it to the mixture and remove it from stove

Coconut milk rasam

Ingredients

  • coconut milk 1/2 cup
  • urad dhal, gram dhal, thoor dhal 1 tsp
  • small onion 3-4
  • tomato 1
  • green  and red chili 2
  • asafoetida powder and turmeric powder pinch
  • tamarind one lemon size
  • curry leaves and coriander leaves
  • oil 3 tsp
  • salt as required

Method

  1. Cut onion tomato green chili and coriander leaves
  2. Dissolve tamarind in water
  3. Add oil in a pan and add mustard seed and curry leaves
  4. Then add urad dhal, gram dhal asafoetida powder, urad dhal, and red chili
  5. Add turmeric powder, cut onion, tomato chili and fry
  6. Then add tamarind water and when it comes to a boil add coconut milk and remove from stove immediately
  7. Sprinkle coriander leaves and serve hot with rice

Cabbage fry

Ingredients

  • Cabbage 1/4 kg
  • big onion and red chili 1 each
  • ginger a small piece
  • garlic 3
  • Gram dhal powder 3 tsp
  • for seasoning oil, curry leaves
  • salt as needed

Method

  1. Cut onion cabbage green chili ginger and garlic
  2. Add oil in a pan and add mustard seed and curry leaves
  3. Once the mustard splutters add the cut chili, onion and ginger and fry
  4. Then add the cabbage sprinkle little water and add salt and close the pan
  5. Once it is well cooked add gram dhal powder and curry leaves and remove from stove
  6. Serve hot with chapati or rice
