Curry leaf curry

Ingredients

  • small onions 10 skinned and diced
  • garlic 8
  • seasoning vadagam 1 tbsp
  • fenugreek, turmeric and asafoetida powder 1/4 tsp each
  • Tamarind size of a lemon
  • jaggery a small piece
  • curry leaves few
  • gingelly oil and salt as needed

To be fried and powdered

  • curry leaves 3 handful
  • pepper, jeera, urad dhal and Bengal gram dhal 1 tsp each
  • coriander seed 1 tsp
  • coconut gratings 1 tbsp
  • red chilli 5

Method

  1. Soak and dissolve the tamarind in water and strain
  2. Add the gingelly oil in a pan and fry the powdered ingredients
  3. Once it becomes cool make it into a paste by adding and grinding with water
  4. Again add gingelly oil in the pan and season with vadagam, fenugreek and asafoetida powder
  5. To this add the onions, garlic and turmeric powder and fry
  6. Then add the paste that you had made and add jaggery, tamarind water, saly and jaggery and allow it to come to a boil
  7. Add one tsp of gingelly oil on the top and once boiled add curry leaves on top and remove from fire

Uses

Cures anaemia. hair fall, giddiness and tiredness

Pirandai (adamant creeper) Thuvaiyal

Ingredients

  • Pirandai pieces fiber removed 1 cup
  • Black gram dhal 1 tbsp
  • skinned small onion 8
  • tamarind lemon size
  • red chilli 5
  • coconut gratings small amount
  • gingelly oil and salt as needed

For seasoning

  • mustard seed, black gram dhal and asafoetida powder 1/4 tsp each
  • gingelly oil as needed

Method

  1. Add oil in a pan and fry the black gram dhal, red chilli, onion, pirandai, salt, tamarind and coconut gratings.
  2. Then remove from fire and make it into a paste by adding water and grinding in a mixie
  3. Add oil in a pan add the seasonings and pour on the paste and serve hot

Uses

This dish is rich in calcium so bone disorders can get cured

Herbal Buttermilk Curry

Ingredients

  • buttermilk 3 cup
  • curry leaves few
  • turmeric powder 1/2 tsp
  • salt, oil and coconut as needed

For seasoning

  • mustard seed, black gram dhal and asafoetida powder 1/4 tsp each
  • curry leaves little
  • gingelly oil as needed

To be fried and powdered

  • raw rice 1 tbsp
  • pepper 1/4 tsp
  • red chilli 3
  • omum 1/2 tsp
  • ginger dried and grated 1/4 tsp
  • budina and tulsi leaves 15
  • coconut gratings 1 tbsp

Method

  1. Add coconut oil in a pan and add the substances to be fried and powdered and fry
  2. Once it becomes cool coarse grind it by adding little water
  3. Add salt and turmeric powder to the buttermilk and then add the coarse paste
  4. Add coconut oil in a pan and add the seasonings
  5. Then add the buttermilk mixture and when it froths add the curry leaves and remove

Uses 

It cures dry mouth and throat problems
